A Quick,Easy and Healthy Breakfast for Dinner

I am definitely more of a baker than a cook, so when it comes to quick and easy dinners, I tend to gravitate towards breakfast for dinner. Here is a poached egg din I whipped up tonight and how I did it!

1. Toast your bread

2. Put half an avocado onto each slice and add salt and pepper

3. Place a healthy (abundant) amount of goat cheese on each slice

4. Poach your eggs (I follow Jaime Oliver’s tutorial here) and pop them on top!

Bam – delicious, healthy dinner
