Ice Box Cake

One of my familys favorite Thanksgiving desserts is Ice Box cake. And while I thought this was a widely known dessert, after making it and serving it at a Friendsgiving this weekend I found that the grand majority of the party had never heard of it, let alone tried it before. So here’s hoping that posting this recipe will shed some light on this widely underrated, super easy dessert.



  1. Whip together your whipping cream, vanilla extract and sugar in a large mixing bowl until stiff peaks form when you take your whisk or blender out (you may have to do this in two rounds depending on the size of your blender or bowl)


2. Place about 1.5-2tbsp of your now whipped cream on a wafer and begin stacking them on top of each other


3. Once your tower of wafers and whipped cream begins to get large (about 5 wafers in or so), flip it sideways and keep adding wafers and whipped cream until you use up all of your wafers and you have a log shape (or two logs next to eachother)


4. Cover your wafer and whipped cream log(s) with more whipped cream so no wafers are showing

5. Refrigerate overnight (or at least 4 hours)

Serve cold!
