Quinoa Bowl for Din

Anyone who eats with me on the regular will tell you that I’m not exactly what you would call “green” eater. And that doesn’t mean I don’t eat healthily, on the contrast, I actually eat healthy foods the grand majority of the time. What I mean to say is that I’m not a kale enthusiast, or green smoothie maker, or all natural, non-GMO, only eats organic kind of girl. That being said, after ordering the Quinoa Bowl at Tavern in the Square on a whim a couple months back, I knew I’d found something healthy, green and most importantly, delicious! So I created my own take on their bowl and it has quickly become one of my favorite healthy dinner options. Here’s how I do it!

  1. Half a bunch of brussel sprouts and slice a sweet potato
  2. Toss them both in olive oil and season with salt and pepper
  3. Place on a baking pan and put in a 400 degree (Fahrenheit) oven until sweet potatoes start to brown or turn dry and the brussel sprouts start to brown (about 12 minutes depending on how well you want them roasted)
  4. Flip them over and keep them in for another 3-5 minutes
  5. Mix quinoa and water (1:2 ratio) together and bring to a boil.
  6. Once at a boil, bring water to a simmer and cover.
  7. Wait about 15 minutes until quinoa is done.
  8. Once quinoa is done, place in a serving bowl and mix in as much sesame oil and soy sauce as you want. (I use about a tablespoon of sesame oil and a teaspoon of soy sauce)
  9. Add sweet potato, brussel sprouts, chopped up avocado and goat cheese.
  10. Enjoy!
