Chicken Teriyaki for Dinner

In an effort to eat healthier and save money I’ve been attempting to cook at home more over the past month or so. And by cook at home, I’m not talking pasta or eggs (my usual go-to’s), I mean meals that are balanced and contain at least one fresh ingredient which is usually a veggie. Last night I found myself with a boat load beans and broccoli so I decided to make a chicken stir fry, which quickly turned into chicken teriyaki because I didn’t make enough sauce.. And I also didn’t end up eating any broccoli.. So really I made chicken teriyaki with rice and beans, which was still very tasty! Next time I’m definitely upping the sauce portion though. Here’s what I did:

  • 5 parts Teriyaki Sauce
  • 1 Part Ketchup
  • 1 Part Soy Sauce
  • 1 Part Sesame Oil
  • 1/2 Part Garlic
  • 1/2 Part Ginger
  1. Mix all ingredients in bowl and throw chicken in to saute (I cut my chicken into 1-inch by 1-inch pieces)
  2. Heat pan to medium heat and add non-stick spray
  3. Cook Chicken with sauce mixture until chicken is cooked all the way through (I stuck a knife through a piece or two to check and make sure it was done)
  4. Put over rice and enjoy!
